Emulsifier-free formulating under cold/cold manufacturing conditions

Conventional methods for processing traditional emulsions require significant quantities of energy and time. For this reason, cold process emulsion technologies have gained popularity, reducing both the energy demand and manufacturing time required.

However, manufacturing of emulsifier-free emulsions which are based on biopolymers, synthetic polymers or even particles is still challenging. These ingredients are normally unable to effectively reduce the oil/water interfacial tension to produce small emulsion droplets. On the other hand, they are able to efficiently stabilize the oil/water interface.

During this lab session we will demonstrate you how to optimise the emulsification process.
